As Promised…

Last Thursday we had a Friendship Fellowship at my home for the women. I had made some goodies for us to snack on and several women asked that I please post the recipes on the blog. Here they are, sorry it took me a week!

Chocolate Chip Pound Cake (Standard Recipe)
1Box Yellow Cake Mix
4 Eggs
1 Small Box of Instant Chocolate Pudding
1 8oz Sour Cream
3/4 Cup Water
3/4 Cup Oil
1/2 Cup Sugar
1 6oz bag of Chocolate Chips

Mix all of the above ingredients except the chocolate chips. Stir in chocolate chips. Bake in greased bundt pan at 350 degrees for one hour. When cake cools sprinkle with powdered sugar.

Coffee Cake
1/3 cup butter or margarine softened
1/2 cup sugar
1/4 cup packed brown sugar
1 egg- beaten
1 cup of all purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 cup buttermilk
1 teaspoon of instant coffee

Topping
1/4 cup packed brown sugar
1/4 cup finely chopped pecans
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg- optional

In a mixing bowl, cream butter and sugars. add egg; mix well. Combine flour, baking powder, baking soda, and cinnamon; add to creamed mixture alternately with buttermilk. Beat well. Spread in to a greased 8 in. square baking pan. combine topping ingredients; sprinkle over batter. Bake uncovered, at 350 degrees for 40-45 minutes. (yields six to eight servings) You can also cover and refrigerate batter overnight before cooking the next day for breakfast.

Fall Pumpkin Dip- serve with ginger snaps or apple slices
8 oz Cream Cheese
2 Cups of Confectioners Sugar
1- 15 oz Pumpkin in a can
1 Tablespoon of Ground cinnamon
1/4 teaspoon of Nutmeg

Mix all together and serve. (I also looked pumpkin dip up on the Internet and found several other ingredients you could add, so you might want to check that out as well!)
